Lima Bean Soup Recipe:

Ingredients:

• 1 cup dried lima beans, soaked overnight
• 4 cups vegetable broth
• 1 onion, chopped
• 2 garlic cloves, minced
• 2 celery stalks, chopped
• 2 carrots, chopped
• 1 bay leaf
• 1 tsp dried thyme
• Salt to taste
• 2 tbsp olive oil
• 1 tbsp lemon juice
• Fresh parsley for garnish

Instructions:

1. Drain the soaked lima beans and rinse them well.
2. In a large pot, heat the olive oil over medium heat.
3. Add the onion, garlic, celery, and carrots to the pot and sauté until the vegetables are soft.
4. Add the lima beans, vegetable broth, bay leaf, and thyme to the pot.
5. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1 hour or until the beans are tender.
6. Remove the bay leaf and season the soup with salt to taste.
