Agar is a naturally gelatinous powder derived from marine red algae. It's the perfect vegan substitute for animal-sourced gelatin in any food application and makes an excellent thickener for soups, jellies, ice cream, and even to create vegan cheeses. Stir agar powder into room temperature liquid and then bring it to a rolling boil, making sure the agar has dissolved. Pour into molds and let it set at room temperature and then refrigerate for a few hours before serving cold.
Do not mix agar powder with warm/hot water as it will clump and become impossible to dissolve.
