Description

High-gluten flour carefully milled from hard red spring wheat and has 14.2% protein. Sir Lancelot flour produces an extra-chewy pizza crust recommended for making the thicker style Detroit style pizzas. The flour can also be used to make more traditional thinner style crusts.

When the dough is prepared for making traditional Detroit Pizzas the heat should be turned down when using the HIZO Pizza Oven (which can get up to 900°F). For traditional thinner crust pizzas in the Hizo, we recommend using which is perfect for making Neapolitan style pizza dough that won't burn as quickly at high heat. Regardless of what style pizza you're making, we recommend using as "pizza slide" to prevent your pizza from sticking to your pizza stone or other baking surface.
