This former Brettanomyces strain was reclassified as Saccharomyces, making for a particularly unique yeast strain. Tropical IPA produces a delicate, tart, tropical mango and pineapple fruit character with a clean finish. This yeast excels at high temperatures, and will produce a more intense tropical profile the higher the fermentation temp gets. Notoriously non-flocculent, but the amazing flavor is well worth it.
