Sugar Kelp (Saccharina latissima), also known as known as "Wild Atlantic Kombu," is a brown sea vegetable that grows in the intertidal and subtidal zones of the Atlantic Ocean. Sugar kelp is delicious fresh or dried, and in both forms can be eaten either raw or cooked. It has a mild, salty/sweet, umami flavor. When blanched, sugar kelp turns a rich green color and can be sliced or used in pasta machines to make kelp noodles.
